We talk to business owner, Grant, on how he came to be in the restaurant scene, how his business has changed over the years and his favourite Artichoke dishes.

What is your background in hospitality? When did you first open at Sanctuary Cove?

2 years ago Artichoke arrived at Sanctuary Cove. I have 40 years experience in hospitality, as an Executive Chef for the last 22 years. I’ve worked in 3 countries outside of Australia – Thailand, Cambodia, Jakarta. Artichoke is my fourth restaurant, I’ve had two in Noosa and two on the Gold Coast. Here on the coast I spend 6 years at Ephraim Island and 2 years here at Sanctuary Cove.

How has the business changed over the years?

Media has played a major part in the change of business. From the various cooking shows, radio and social media it changes restaurant. How popular it has become in my view has been the major transfer of restaurants.

How would you best describe the dining experience at Artichoke Restaurant & Bar?

To describe Artichoke, it would not be classed as fine dining but we pride ourselves on the finest quality produce and products. We buy the best ingredients which means the executive team has massive success in the quality of the product we produce in the kitchen. Put together with our bar and customer service.

What are you signature dishes at Artichoke Restaurant & Bar?

The whole fish Red Throat Emperor Rob from the Asian spices served whole with a sweet chilli and cucumber vinaigrette is one of the most stunning dishes you’ll ever see. We also have Coffin Bay oysters which are freshly shucked and served with an Aperol Campari limoncello sorbet with a cucumber vinaigrette.
