Meet Max from Ioesco
Dine local at Ioesco and support your Sanctuary Cove community. The restaurant is known for contemporary interpretations of classic Napoli cuisine, that doesn’t compromise on size or quality, with soaring ceilings, sparkling chandeliers, a marble bar and water views; all of which are complemented by a relaxed vibe and alfresco seating in the tranquil Sanctuary Cove surrounds. We talk to business owner and Sanctuary Cove resident, Max, on how he came to be in the restaurant scene, his favourite Ioesco dishes and what community means to him.
What has been your journey to opening Ioesco?
I’m originally from Adelaide and owned several establishments there before opening a restaurant in Runaway Bay in the late 90’s. Following this I had a restaurant on Ephraim Island, and it was here I was approached by a previous CEO of Sanctuary Cove, who encouraged me to come across and open a restaurant at Sanctuary Cove. We’ve now been here 12 years and have since become residents during this time too.
How has the business changed over the years?
We’ve welcomed regular families to Ioesco over the 12 years we’ve been here and now we are seeing the children and grandchildren of our customers, which is wonderful to see. In terms of change, I guess its these growing families. We’ve been lucky in the fact that external economic factors haven’t really affected our business, and as always, our local business is made up of about 40% local customers and 60% of customers who travel from Brisbane and the southern Gold Coast.
How would you best describe the dining experience at Ioesco?
Ioesco is a traditional, Italian family restaurant. We serve rustic food, from everyday favourites to new dishes and the one thing that people can always be guaranteed is that food is the freshest you can get.
Where do you get your inspiration from? Do you change the menu often or are there rotating specials?
We have the core, traditional menu that is always on offer and we present new offerings by way of the special’s menu. These special dishes are all created in house, I don’t really seek inspiration from other restaurants, I create these simply from experience and knowing what ingredients mix together well and flavors I know my customers will enjoy.
What are you signature dishes at Ioesco?
I would have to say the beef carpaccio, traditional lasagna and also the vegetarian eggplant lasagna is very popular too.
Has food always been a passion of yours? Do you like to cook at home?
Always! I’m a third-generation restaurateur and always knew this is what I wanted to do. Food is my number one passion and I love to cook at home too.
If you could pick one dish off the Ioesco menu to have for lunch today, what would it be?
I’d say the chicken parmigiana – eggplant, pancetta, parmesan cheese and Napoli – delicious.
Tell us more about what community means to you….and your thoughts on the SC community?
Community is absolutely everything and I believe Sanctuary Cove is one of the greatest destinations in the world. All the retailers within The Village are very supportive of each other, many of them dine here and I also shop here as much as I can too support them. Supporting local business is so important as it keeps money within the community allowing it to survive and thrive.

Typical Breakfast? Nescafe – no food.
Early Riser or Night Owl? Early riser
Favourite holiday destination? Hayman Island – I’ve just returned from holiday there and this is my new favourite destination – you are forced to just sit and relax without the distraction of shops, etc. It’s replaced Noosa for me.
You’re Currently Reading? I only read cookbooks, my favourite are by my all-time favourite chef Antonio Carluccio.
